Master chef inspires with live in-store cooking The Jumbo Food markt in Breda, The Netherlands, is celebrating its one year anniversary in March. Not only is it the largest supermarket in the country with 6000 m2 of assorted products, it also features live cooking by a master chef and his team. Michelin star cook Ton Verhaar is in charge of managing the kitchen crew and developing consumer recipes which are both presented in-store and in Jumbo’s consumer magazine. “Eat it, take it and make it, those are the basics of the Jumbo Food markt concept. At Jumbo we focus on afFordable, healthy and easy meals, while giving special attention to quality and presentation. We prepare delicious meals using ingredients from the supermarket, in full view of the consumers. This way we can show them what you can create with great products. It is all about tasting, seducing and sharing our product knowledge with consumers. We make sure people can eat the meals we prepare on the store floor right away at the Jumbo Food Café. They can also take the meals home or buy the ingredients if they would like to try the recipes themselves. We believe shopping and cooking have to be as convenient as possible.” Cooking creatively “One of our challenges, like every supermarket, is to reduce the amount of waste. We want to present full shelves to consumers, no matter what time of day it is. It can be difficult to measure the exact number of fresh products needed, because you never know for sure how busy it is going to be in the store. This is what I like about my job: no working day is the same. We are continually improvising on what is available in-store. We use ripe fruit from the store for smoothies which we sell at the fruit bar, for example.” Easy quality recipes “Before I started working at Jumbo I cooked for eighteen years for a Michelin star restaurant. I was really ambitious to do something more with all the knowledge I gained over the years. This comes together in developing consumer recipes. As consumers need to understand the recipe from A to Z, you have to take them through every step of the cooking process. I believe food has to remind you of good memories, such as picking berries in the forest as a child and making your own jam. The different products in each season inspire me when creating consumer recipes for Jumbo. I always ask myself what we can do to add something new to our products.
